Nourishing Roasted Carrot Soup

Warmed Nourishing Roast Carrot Soup.  Preparing this soup with plenty of animal fats ensures your body will be happy to convert the beta carotene in carrots into vitamin A that your body can use!  This soup is so satisfying-especially with extra butter and sea salt on top! 

1.  Coat chopped carrots in chicken fat and olive oil (or fat of preference.)
2. Roast at 350 degrees until tenderly pierced with fork.

3. Saute chopped onions, garlic in duck or chicken fat.
4. Add Broth or Stock
5. Add roasted carrots to hot liquid stock
6. Puree  with immersion blender (just got one and I love it!)
7.  Salt to taste and add a dollop of creme fraiche or butter! 
8.  Enjoy!
