Chocolate Nut Chews
1 cup almonds
1 cup cashews
1/2 cup shaved chocolate or carob bits (if you want them chocolatey)
1/2 cup raw honey
1 tablespoon vanilla extract
1 teaspoon sea salt
1 cup dried unsweetened coconut meat
(you can add some maple syrup if it needs more sweetness or moisture)
Place nuts in food processor until finely chopped but not pulverized.
In another container combine honey, chocolate, vanilla and salt in a bowl set over simmering water until all the ingredients are melted. Add melted mixture and coconut to nuts in food processor and pulse.
Line a cookie sheet with buttered parchment paper ad spread mix 1/2 inch thick. cover in parchment paper and refridgerate for a few hours. Cut into small squares and store in an airtight container in the fridge.
(You could easily add pre cooked oats+maple syrup to this recipe too.)
