Chipotle Chicken Enchiladas

I've made these with chicken and then these ones are with beef: Yum-o

I've always been offended by canned enchilada sauce, so when I discovered this recipe and realized I can make my own enchilada sauce fairly easily, I was thrilled. See:
Side note: I used regular chili powder, diced canned tomatoes, and added cilantro to this recipe! I reccommend you add chopped fresh cilantro as well!
